i have heard about University of Waterloo, University of Toronto, and McGill University.
are these some of the best, and do you know of any other really good universities?

Macleans Magazine ranks them each year for the past 15 years. The issue is still available this month at newsstands, but has been out for awhile, so might be difficult to find. There are many different things to consider, so i recommend checking out that. They include interviews/surveys from students.
The top 3 in 2005 and unchanged from 2004 are
1 St. Francis Xavier
2 Mount Allison
3 Acadia
4 UNBC up from 7th in 2004
None that you list are in the top 20.
The first link is the 2005 top 20, the second link is various other information from the 2005 issue. I don't think you can get 2006 information on-line as they want to sell that to you. But the top 3 are the same for the last 2 years, are probably similar.
While I was out looking for the link someone answered including the Macleans. Just want to highlight that the issue is out now, it comes out in the spring. I'd give you my copy, but I gave it away months ago. You can order it on-line somewhere in the links I provided.
Assy - U need to watch dumb statements like that. Huh! Canadians will tend to believe that you are that stupid. The first University opened in North America was in Canada.

Depends on the program. The highest rated usually is Mount Allison University in New Brunswick, but University of Toronto, McMaster University, Trent University, Dalhousie University, Queens University and the University of British Columbia are excellent as well.

University of BC is good i heard, and Memorial in Newfoundland has the lowest tuition in Canada, and is ranked pretty high in McLean's Magazine. I'm attending St. Francis Xavier in Antigonish, Nova Scotia, because it has the best undergrad program in all Canada; again, from McLean's. You should get your hands on a copy of the edition with University rankings in it. i think it comes out around september every year.
Dalhousie in Halifax, NS, has a great facility, and a medical school. I guess it really depends on what you want to study. Mount Allison in New Brunswick has a great arts program, and is also ranked high as an undergrad school.
The Maritimes offer some really great educational institutions. We get students from all over the world who come study here.

I have heard that the University of Windsor (ON) is good for law.
btw - college and university have different connotations in Canada - College is essentially trade school where you get certificates and not degrees while University is accredited degree programs.
