It's a Dell, about 5 years old. Recently it's started freezing up and the screen fades to a gray/white and also has waves of creepy gray and white. Is it just too old?

take your computer to a service station , may be you need a video card or you need to change only the video port , otherwise they will check all of your hardware's .but ask about cost of service may be bye a new laptop is the best choice.

Easy test.

Hook a external monitor up to the laptop. If it does the same thing on the external monitor you know your Video card is hosed.

If the external monitor is fine and your LCD starts messing up your LCD is the problem and then you can decide if you want to repair the display or replace it.

Either way with a 5 yr old laptop any repair will be almost the cost of a new one.

I could also be that your LCD Display has a failing back light. That can be replaced. LCD's work by letting light through by turning off various pixel eliments. The light has to come from somewhere, so there is a small light source behind the display. Or the display itself is going out. I have older Dell laptops and they are still working fine.

As a rule you cannot replace the video card on a laptop (with a few exceptions) as it is soldered into the mobo. I would start thinking about a new one.

No, you can go to a computer shop to get it fixed or just buy a new one.
