Take two trellises, and put them together to form an upside-down vee. Grow pole beans up the outside of them, radishes underneath, and spinach all around. All three companion well together, and you can till the bean vines back into the earth after they are all finished. You could also substitute small cucumbers (try Boston Pickling) for the beans.
