The most water resistant wood you might find is Cypress. No offense, Cedar might smell nice in a closet but sealing it will kill that effect.
Sealing the wood should certainly be done with an oil based exterior clear substance. Be mindful of adequate ventilation, wear a respirator mask, do it in stages, and allow to dry/cure for no less than manufacturers recommendations.

Well, the shower stall is just an open ended box, with a large swinging door, so you should be able to figure the design part out yourself. As far as sealing whatever wood you decide to use, the best choice would be to go to a marine supply store and use a marine grade sealer for boats. I would think this would last the longest.

make the stall like a large Wood barrel, cut the angles and it will seal itself-

I would go with cedar, espcially for an outdoor shower. They make good decks from it and I have seen baths and sinks made from it too.
