It is spelt yes, but in England there are many different dialects. Some people say the 'S' at the end, some don't. I am from Liverpool and the way we say yes often comes out as Ye. (yeah)

In formal written English 'yes' is correct, but as for speech - 'when in Rome...' - use whatever works wherever you are!
