How difficult is it for a complete novice to replace a shower base? Do you just remove the doors and lift off the base?

Depends on the shower base. In all I have ever installed the shower walls overlap the base, therefore the shower walls have to be removed first. Of course, before you remove the walls all plumbing features like the shower head, shower head pipe, faucet handles, etc...have to be removed. If care is not given then water leaks may develope. After the walls are removed along with the plumbing features...the floor drain must be removed. This can sometimes be difficuly or hard. Some drains snap in and can be removed quite simply, some require a special tool. After all that, the shower floor can be removed. Again it depends on the type of floor, some screw down, most are glued down. Hope this helps.

If you take your time and are careful you should be able to do it - especially if you have a back up plan in case you mess up big time!
Remove doors and lift out base? No, not really. You'll have the take the drain out as well - being careful not to damage anything. Check out how the doors are fixed. Some are simple hinges and some have rolling track mechanisms. The hinged doors are easier as long as they haven't rusted in.
Beware if the base has been stuck down.
Make sure the new base is EXACTLY the same size as the old one and that the drain hole is in the same place.

It's as simple as falling off a log .. you can only take it off one way then just reverse the procedure

if the plumbing is already there then yes.
Make sure you re seal the sides though.
