There is not one test to determine drug target. One method currently used is protein microarray in which numerous human proteins are placed in specific areas on a chip and the drug of interest is added to the reaction. Binding of the drug to these proteins can then be measured. Another method is to label the drug so it can be injected and imaged to determine where it binds.

Essentially there are hundreds of expeiments that can be done to determine the target of a drug. Many drugs we don't even know all the targets in the body, we just know they work and don't kill too many people.
