You are victim of advertising. McDonald's fries are no better than most others that have the same funky shoestring fries. They're good only when served fresh. After a few minutes, they start to become hard, chewy and inedible.
For years (long ago) they advertised them as "Award winning french fries", but when they won the award, they used fresh cut french fries. I guess false advertising wasn't as big a deal back in those days.

me, a employee of mcdonalds... will tell you the REAL answer.
when we get our frys in from the shipment, they are already in shortning, a different shortning than what we fry them in. We fry them in veggy oil, for four mins, than, they are salted with a HUGE amount of salt. no matter the size of basket, it gets about.. 1/4 cup of salt on it.
we are the only ones who actually use this way, so they are also differnt, all the others, seem to all do the same thing.

No different than other fast food, however, In 'n Out are the best. Oh so fresh. They cut the spuds right on the spot and fry them.

The salt they add after frying contains a fair amount of sugar mixed in.

They ONLY use that deep-fryer for frys...unlike some other places drop other stuff in the same oil. The oil is changed often, and as soon as they come out, they add salt...and lots of it.

They were better when they were cooked with beef by-products. Then last year, Hindus and vegetarians got McDonald's to remove it. The best fries are fresh-cut and cooked in peanut oil.
