I am sure a balanced and nutritious diet improves your health and adds glow to your skin colour. But it cannot alter the basic factor. A dark person cannot be turned into a fair one, just by overeating or dieting.

I'm not sure if it is just a matter of the amount of food or if it's the amount of a certain food. I know that people that eat an excess of a certain seaweed have seen their skin turn an orange color. As for eating less and becoming fair i'm not sure if it's because of the food or anemia or another ailment that occurs from the lack of a vitamin or mineral.

No, it all depends on WHAT you eat. The saying "you are what you eat" is true, just not in the sense that if you eat a cookie you'll become a cookie - no, you'll simply take the nutrients and pigments of the cookie.
