Go to your local Recruiting centers and ask if they have any ideas. If you know individuals who are in Iraq you can send them stuff via their APO mailing addresses. They need letters of encouragement, daily life, photographs of familiar places, events and people, magazines and other reading materials would be nice for those that are in Iraq but aren't actually down range. Word Search and Cross word puzzle books are nice for down time as well. Otherwise, they would love to get some candy and other niceties. Some soaps aren't good for in the field, so I'd avoid that, but other bits of hygiene equipment that aren't strongly scented would be nice too.
