My fiance has bad debt from his previous marrige. We have a house and truck under my name and don't want the creditors to have access once we're married. How do we avoid that?

Depending on the state you live in, I would avoid being legal co-owners of anything until his credit problems are resolved. Don't put his name on the title for either the house or the truck. Don't open any joint accounts together if you can avoid it. Keep yourself financally unmarried, at least as far as can be determined from a credit report.

I would see an attorney about putting the house and truck you own into a trust so that if you die suddenly, he gets them without having things go through probate and without having to pay any estate tax.

Attorneys for such things are really not that expensive and well worth it. An attorney would also be able to tell you about property laws in your state that could impact your situation.
