catch cans serve a few purposes. i belive they were intially implemented b/c of the whole fuel being flammable thing. however, they ahve proved to be a lot more helpful
sure they catch the overflow from the gas cans for safety reasons..
obviously high octane fuel woudl go boom..and it would also create a freakin' mess on pit road. gas doesn't just soak into the ground and i dobut any of the pit guys would be really happy playing in it.. (okay..well they are boys, and probably many are pyros..but that's besides the point, LOL)
also, it cuts down on a lot of the vapor that is aslo flammable b/c you don't just have gas ooozing out whereever it feels like it. what a lot of people dont' realize is that fires from gasoline do not actually start b/c of the gas itself..but b/c of the vapors coming from it..
and wow.. that is one high i would nto want... the smell of all those fumes after like oh say the third pit stop and all that fuel sitting on the ground.. EEWWWWW.
as with our personal cars..every last drop of gas counts and they want to be able to get every last possible drop into those cars so that they can run longer w/o having to worry abut running out of gas..the catch can allows them to dump as much as possible out of the 12 gallon can into the car.. so when it's close to full they don't just have to stop..they can keep going until they are sure it has all that will fit and the rest can drip into the catch can..
now those are the big reasons.. but, it also allows the gas to flow in quicker.. kind of like that if you tilt a bottle of water and allow a little bit of air it flows out faster..same with the gas.. the pressure of the fuel coming out isn't fighting itself out of the tiny nozzle.. yeaay for faster pit stops!!!

Yes you have a gas catch can for all the reasons the answers have given but did you know that even more important is the oil catch can?
High reving race engines throw oil out of the engine breather pipes and the can stops it being dumped on the track.

The catch can is a vent so that when they are fueling the car up the excess air can escape allowing them to fill the tank to capacity. It also catches excess fuel so not to cause a hazard.

One thing that nobody has brought up is that the can acts as a vent also to allow the fuel to flow into the tank faster. The gas can has a vent also, it is the part that looks like a handle. Do you really think that they are worried about spilling?

well, the gas tanks in the cars are 22 gallons, and each can holds 12 gallons, the catch can can hold the 2 gallons of overflow, thus reducing fire hazard and the inhalation of the fumes

One important point nobody has commented on: It also get them back on the track quickly. Next time a Race is on watch the Pit Crews you'll see what I'm saying.

it catches any excess gas that comes out the vent tube when gassing up the car. they don't want the gas on the ground where it can cause a fire hazard
