OK. Pay attention because I read the other answers and those people are idiots. I own a granite countertop. Water definitely DOES stain granite. Granite is porous, so therefore it does stain. However, if just a water stain, it will dry up and go away after a few days. If you spill something like olive oil or cooking oil on it, you're screwed. It will not penetrate everywhere but in the areas where it is more porous than others. It is a natural product, so its density and porosity will vary throughout the slab. You need to use sealer every so often to attempt to PREVENT stains from happening. However, the sealers you use will in no way completely block a stain from happening. The key is to be very careful and not allow liquids to contact the granite as much as possible. PLEASE READ THIS: WATER AND OTHER LIQUIDS DEFINITELY WILL STAIN GRANITE. Am I making myself clear?

water doesnt stain but oil based products can, most designers use the lipstick test on granite before buying, i've installed drop-in-sinks on granite countertops and had to be very careful with the pro-dope, unfortunately i dont know anyway to remove the stains

Hey lic. contractor. Have broomed in pure portland cement to pull oil stains out of unsealed concrete and soft stone (entry, pavers, marble, etc). Do you think it would work on granite? I 'spose it might scratch, even if pure, but could reseal afterward? Whatcha think?
