The Air and Generator are both deigned to run while driving. So long as everything is in working order, it is fine to do so.

I do it all the time.

I am assuming the AC unit derives its power from a generator, rather than running of the engine's alternator. Was this topic not a part of your owner's manual, or have you added the AC unit after market?

Running the generator while driving may not be a good idea. Air flow changes dramatically when moving, especially at higher speeds. You may introduce exhaust smoke into the living area, with deadly consequences.

Change in air flow may also deprive a generator of sufficient cooling air, causing it to overheat, probably ruining it or even causing a fire.

Contact the manufacturer of the RV, the generator or the AC unit. Until it's know to be safe, I wouldn't do it.
