I know that homosexual activities run the gamet but which one comes to mind as meaning "gay sex" to you?
No gay bashers or homophobes please. I am not looking for judgment just trying to get some definition for an article I am writing.

Well, the most direct and perhaps obvious, is sex between two males anally. Of course, gay sex could also mean oral, hand jobs, or rimming, and the works, but sex-- short for sexual intercourse, i think implies some penetration... if you're trying to find the answer i most agree with. So... in short-- gay sex is best summarized by anal sex. the others are also aspects though.

I suppose for just the term "Gay Sex" this is what comes to mind.
Two males a top and a bottom. The top penetrating the bottom with his erect penis usually from behind. The top then proceeds to move in and out humping the bottom.
So in my mind "Gay Sex" refers to a male couple in the doggy style postion where the top does most if not all the "work".

I'll admit, I fall into the trap of thinking "male", but that having been said there's still a pretty wide variety of activities that I think of. Pretty much anything two men can do together.
If I actually think about it, it should include lesbian sex too, but I figured you were looking for first impressions?
