Great question, Emma.
For me, it HAS to be The Outlaw Josie Wales, and let me tell you why. So many westerns give a clean, almost antiseptic view of the west, and this film doesn't do that. Josie Wales is a gritty, earthy film that has real punch to it, and a rich textured you-are-there feel as well.
It also has an unbelievably stunning cast, with Clint Eastwood, Chief Dan George, Sam Bottoms and others who recreate the period with such detailed authenticity, you actually feel that you're watching history unfold, and not a Hollywood movie.
And more than all of the rest, this film has genuine heart. It's unafraid to tell the truth. At the climax, when Josie Wales confronts the indian chief "Ten Bears," you're watching one of the most powerful scenes ever put on film. And man-oh-man does that scene ever speak the truth about life, politicians, and how people live and die together.
For all of these reasons, Emma, Josie Wales rocks.

The Magnificent 7 is my favourite also but I do like Jeremiah Johnson if that can be classed as a western.
