i just want to know if, like, steel is better than another kind of metal, and maybe what style of grill is best.

Properly seasoned, cast iron is the best metal for a grill plate. It holds heat and distributes it evenly. Best advice is to avoid cleaning it with soap since it will remove the seasoning that allows for a nonstick type surface. A cast iron grill grate will behave in a similar manner as a cast iron skillet.

Cast iron is more durable, but stainless steel is the easiest to clean and will be a better choice for delicate foods like whole fish or certain veggies.
