Humans do not maintain a balance in the food chain. In some environments, we over-harvest one organism, causing population drops in its natural predator organisms, and disruption of its natural prey organisms.
A good example of this is fishing in the ocean. We've overharvested the big predatory fish. Their natural prey, for example fish that eat coral, would become more abundant -- until they destroy the coral reefs on which they depended. Lots of species depend on those coral reefs. The result is a damaged ecology, with only a few species surviving.

I would say that humans maintain some balance in the chain, but the chain is now thought of as more of a web than a chain. LIke, there aren't very many large animals that feast on humans a resource of food (unless provoked or extremely hungry, or perhaps depending on what part of the world you live in). But mosquitoes feed off the blood, small microbes use humans as hosts, while maybe not killing humans entirely they still depend on something to feed off of.
But humans have developed many ways to form a sort of synthetic web, we can use antibiotics and mosquito repellent and kill off other animals that attack us. We also create much of our own food sources in mass amounts; although many cultures still hunt for food.
