yes. actually, a lot of people capture the water to use for watering in an effort to conserve water. you can even use water from your shower (put a bucket in the shower with you to collect extra). check out greywater...it's really interesting: http://en.wikipedia.org/wiki/Graywater

I would not use the water because it could contain harmful elements taken out of the air and maybe damage the plants.

My friends air unit waters a bed of elephant ears and they are the most beautiful ones that I have seen so my guess would be that its fine.
