Many friends act in each other movies, specially comedians. Look at Matt Damon and Ben Affleck or even the Olsen brothers, they do it too, or at least used to.

Actually, there were lots of movies that Rob Schneider wasn't in, including Happy Gilmore, Billy Madison, The Wedding Singer. It seems Schneider has only been in Sandler's latest movies. This doesn't include flicks like Spanglish, Punch Drunk Love, etc, since Adam didn't write, direct, or produce them, so he had virtually no say in the casting.
But check out Allen Covert. He's been in Airheads, Happy Gilmore, Bulletproof, The Wedding Singer, The Waterboy, Big Daddy, Little Nicky, Mr Deeds, Eight Crazy Nights, Anger Management, The Longest Yard, and now Grandma's Boy (produced by Sandler).

They have been friends for a long time, since SNL. Adam puts Rob in all his movies, even if it is just a very small part. It keeps Rob working and it shows Adam's commitment to Rob and their friendship. I do not think there are ANY movies that Adam has done that Rob is not in. They make a good team. They are funny together.

It's sort of a SNL tradition to have your co-worker on your movies. Other team-ups include David Spade and Chris Farley, Steve Martin and Martin Short, Chevy Chase and Dan Akroyd, Dan Akroyd and John Blueshi, Will Ferrel and Molly Shannon. Another little tradition of SNL movies-you can find Christopher Walken in almost all of them. I think the formula is, "If those two were funny together on SNL, their bound to be funny in a movie together". And it works! Although after a while the teams begin to seperate, each one moving on to do their own movies.
In a episode of MTV "Cribs" when Rob Schnieder was showing off his house he said, "I call this the house that Sandler built."

Well, they were both on SNL at the same time so I am guessing that it stems from that. I imagine that they are friends too. No, I can`t think of any movie that Adam was in that Rob was not.
Loved Rob`s Hawaiian surf guy in 50 First Dates.

Because they're pretty good friends as they worked on SNL together for years. Rob is probably not in Spanglish, but I didn't see the whole movie so I can't be sure. He's also not in Punch Drunk Love. Dramas.

They're friends and were on SNL together. Also, Steve Buscemi is in just about every Adam Sandler movie. But I don't remember seeing either of them in "Click".

Maybe it's the same reason that Joan Cusack is in almost every movie that John Cusack is in. Or for that matter, Jeremy Piven is in almost every movie that John Cusack is in. Friends and family! Wouldn't you look out for your friends and family and want them in movies you're in? Especially if they're great actors in their own right and are easy to get along with.

Well it's because they were on Saturday Night Live together and became good friends. I cannot name any. They pay a tribute to each other in every movie because of their friendship.
