The Genghis Grill comes highly rated. You choose your ingredients and they are cooked near by. Meats and chicken are available, but not required.

I saw a lot of good restaurants that had vegetarian dishes, but not many that were totally vegetarian. The second link is a list of them, including Genghis Grill

I am a meat eater, but I love the Cosmic Cafe in the Oak Lawn area. Bangkok City in Plano is Thai food and offers a lot of vegetarian options.

Veggie Garden in Richardson has good vegetarian Chinese food.

Cosmic Cafe is entirely vegitarian/vegan friendly, decently priced and has a good patio.

It's a chain, but I adore Soup r Salad. Buffet style.
