in my understanding a boiled potato would absorb water from the boiling and thereby gain weight.... but if left in a dry place where it can drain somewhat and the air can absrb some water bck in... the potato would in fact weight less than before it was cooked because some of the potato would be dispersed in the water...

increases slightly. the starch gets cooked and more water is absorbed.
