Like for exmple, if you like this girl, but she doesn't like you. Then you try as hard as you can to win her heart and when you finally do, you realise then that you don't want to be with her anymore. Why is it so?

It is a matter of reaching for the golden ring; once you have it, you notice it is worthless. Wanting a special girl, just because you don't have her is like grabbing for a beautiful rose and ending up with a handful of thorns.

One explanation is that it is human nature to love challenge, excitement of conquest. The thrill of winning someone who doesn't show much interest is sometimes the sole reason for liking that person.
But that also changes after. When you encounter someone that you will really fall in love with the situation becomes different. Love is a stronger emotion than a simple thrill.

If you care to read deep enough you could come to some rational conclusions on your questions. I will attempt to show you in me.
Please observe the need of companionship. First concern would probably be to OBSESS ON OBJECT of choice (woman, position, riches). I read that fantasies of posssession (of women, position or riches) beg for methods to use in acqusition of the object (steps necessary to achieve the best of all possible outcomes).
When these "steps" are initiated they are attempts to gain CONTROL of the ultimate goal. When one form of CONTROL does not work, another must be instituted immediately to bring the appropriate response to attempts of acqusition (further CONTROL).
What I'm saying is your issues are about CONTROL.
When all your plans and devices work to bring you your object of desire it is a done-deal and its now time to set goals for something else to CONTROL ... so your newly acquired POSSESSION becomes unimportant and a new goal takes its place, but, the method does not differ. The new issue is again CONTROL.
Whatever the new goal is your wish to obtain it is simply another attempt at CONTROL.
You are young, self-serving, obsessive and possibly sociopathic. Why do I say that?
You have stated, in plain english, that you want CONTROL over objects or persons. When you obtain this CONTROL, or, acqusition you morph back into step one again. This tendency to REPEAT demonstrates your inability to grow beyond your adolescence behavior restriction.
I suppose, the very last thing I will bring forth is that you will be stuck in a CONTROL mode until you MATURE INTO ADULTHOOD where you can LEARN to "cherish, admire and/or preserve, love and protect."

You like the challenge of obtaining the impossible. Once the challenge is gone the want goes away.

The 'challenge' realized is no longer the compelling goal. And Man is naturally curious, fickle and dogged.

Why does the grass look greener on the other side of the fence????
You always want what you don't have. Envy is the word. You don't need it but you want it.

Perhaps you are into the thrill of the hunt or the joy of acquisition and not really the item or person.
