Go on the main menu of the ipod. Then choose settings. Simply just scroll down to the shuffle and repeat column, and with the middle button, click, and they will be turned off.

From the Nano, Press Menu on the click wheel. Select Settings and click the center button, then scroll down until you see Repeat, click the central wheel to turn it off/on, then find the Shuffle option (just above on mine) and click the central wheel until it changes to off.
