Back in the 80's and early 90's "Def" was a word that meant cool. For example "Yo man that new RunDmc song was def". So maybe that's why Russell Simmons and Rick Rubin decided to name their record label Def Jam when they founded in the 80's

"Def" was a word invented to mean "cool" in the 1990's by the hip hop society...but it was put to "death" there was an actual funeral for the word/term "def" b/c it was being used by everybody and hence lost its' "coolness".
