Just explain to her why you like having her as a friend (ie, good listener, fun to be with easygoing etc.) and that you don't want to ruin that by dating. Friendships rarely survive a failed relationship. You don't need to lie to her or go into why your aren't interested in dating her. Stick to the positives and you'll be fine.

There is no way of rejecting someone and not hurting them. The best you can do is be honest with her about your feelings, you'd be better off keeping a little distance between the 2 of you until she is ready to be friends, if she ever will be again.

Well all you have to do is just be honest. It's better you let her know that you don't feel the same way she feels about you than to string her along, only for her to find out later that you are not in love with her. He maybe disappointed now but she'll still be your friend but if you string her along she'll end up hating you. The sooner you let her know the better.

All you can do is be honest. Simply tell her that you really enjoy just being her friend. Hopefully, she'll understand. Good luck.
