I've lived in Morocco for a year and a half and there is a lot to do there for weeks not just one week. The best is Marrakech city where you can go to Jamea' El Fenaa square which is a big market with art and crafts. There are also many historical sites there like old muslim schools that have many rooms and courtyards, very beautiful and historical tombs. There is a place called Menara if i remember that has a nice olive orchard and a relecting pool. Marrakech also has many nice resturants and Moroccan food is really good, its worth it to go to one of the fancy resturants you may also find a belly dancer there.
Not far from Marrakech (you can go by bus or taxi) is the Ozoud waterfalls. The waterfalls are huge and you can swim there. There are many resturants there with good food and you can either camp (can rent a tent and sleeping bags there) or go to a hotel.
Fes is also nice, you can go there by train from Marrakech but it will take many hours. In Fes there is a really old market where you can also see how they tan leather.
On the way to Fes is a nice town in the hills called Chefchawin (not sure of spelling) all the homes in the town are painted completely white, really nice architecture.
Ifran is another nice town with very beautiful scenery, its in the north.
If you want to go to the beach go to Agadir, it also has a paramanade at night were all people are out and they have local singers at cafe shops.
You can also do a desert voyage in the South, go to Zagora town and then from there go to Mhamid Ghizlane, its a small village that has organized tours deep into the deseret.
Anyway, you should buy the lonely planet guide and it will tell you where all these places are and how to go between them. Morocco is big so getting around will take time. You may need to limit your visit to two or three places.
I didnt like Casablanca or Rabat althought Casablanca has a really cool mosque right on the shore, one of the biggest mosques ive seen. but nothing else was really interesting to me.

Oh, you can easily spend a month in Morocco and travel around, hang around old cities, beaches, hike and do eco-tourism, and there is always the desert with beautiful sunrises and sunsets. Enjoy!
