I think it's possible to have varying degrees of self-knowledge but I assume that what you're suggesting is that it's not really possible to know yourself completely and I would definitely agree with that. Nobody's memory is perfect and so we inevitably have a distorted image of who we used to be, and we cannot know what we will become. The concept of an "identity" is a reification of an endless series of ephemeral and ineffable instants - and we build it out of the sedimentation of all our actions, words, bodily appearances, etc. - and as the plurals I'm using suggest, none of these can define "who we are". I might act selfishly on several occasions, and selflessly on one or two, so people might say that I am selfish... but the person who was the recipient of the selfless action would disagree!
Furthermore, the concept of the unconcious undermines any assertion of self-knowledge. I might insist to you that I'm selfless and genuinely believe it, having forgotten my selfish acts because I want to forget them, because they don't fit in with my self-image.

If you mean that we need to strip away our layers to become in touch with our core self, so we can act instinctively or intuitively, well that is very often true.
But it goes both ways - we also need to tame some of our raw nature to become something. And the enjoyment from doing so, because it let's us reach a newer level of experience, is an equally rewarding and important part of becoming/discovering ourselves. Of course whatever we build still has to connect to our core for it to work out happily.

I know who I'd like to be. I know who I'm not. Even so, it does not necessarily follow that I know who I am. I don't think I'm crazy enough or brave enough to go there.
I'm shallow enough to pretend I know, but not deep enough to really figure it all out.
Now I have a headache.

The idea we have about who we are might be a hindrance to discover the true self. Sometimes we get so used to doing things that in the end it is difficult to tell your self apart from what you are doing. To realize who we actually are we sort of need to forget our past history and focus on our abilities and skills to do something.

yeah, that's a truly deep question, and it can't be answered correctly within a few words, since it's one of the most important questions that can apparently exist, thus, one can't get to know itself still being a human, since a human consists of all kinds of energy and substance which is partially hidden from the science and eye for known reasons, a human is a relative universe from all points of view, to get to know thyself you have to know the innermost principles, it's impossible to count them all, after a long trip of going inside itself one will discover the transcendental Tower of Truth - the final and only religion, the promised land.

I am way too deep of a person to know myself totally and therefore every day is wonderful cause I learn new things about myself my emotions , feelings and thoughts .

know thyself is a command, a charge, a dare and wish.
Like "Va savoir" -- go find out.
People who ignore the challenge are picking their nose at the edge of the abyss. I fail to see how that level of existence even compares.

But you will know yourself once you start searching within you.
Yourself is wider and deeper that the whole universe.
The more you know yourself - there is more to know.
