I'd like to decide when to delete my old mail, can I set it so my trash will not "purge" itself?

No, but you can create another folder - anyname you choose - and save your emails to that folder (instead of "deleting" them to the trash folder./ Your new folder will not automatically purge.

you can't make your trash to not delete itself, but you could just leave your mail in your inbox and it will stay there.
