Asking because i keep hearing that most Americans of the South are of Scottish and Scotch-Irish descent yet when you look at the ancestry figures for the Southern states English Americans greatly outnumber those who put Scottish, Scotch-Irish or American as their ancestry.

If you are asking about the old south, ie; pre civil war Spain settled modern Florida and France Louisana. Many Scots and Irish settled N. Carolina and the mountainous regions of W. Virginia and eastern Tennessee. S. Carolina, Alabama and Georgia were predominately English. There is also a significant presence of Amerindian and African people that continue to this day.

Well, I can't speak for the entire South (and everyone has a different opinion of which states are truly "Southern") but here in Louisiana, there are very, very few Scotch, Irish, or English. Most caucasians are of French and/ or Spanish descent and most everyone else is either African-American or of Carribbean descent.

In places such as Texas, New Mexico, Arizona and California, whites are by the most part English descendants, but we do have some Germans and French descendants as well. Also, there is a strong Hispanic population.... and don't forget the n***ers.
