Do you want the nicest place to eat in Vegas? A place that you can brag to your friends? You want to go to Joel Robuchon at the Mansion in the MGM Grand. The dinners start at 175.00 and is a french tasting menu. Here are some other nice restraunts here in Vegas that would be nice for dinner: Michaels @ Barbaray Coast, Mesa Grill, Little Buddha @ The Palms, Alize, Il Fornio, Joes Stone Crab and Claw, 808 In Caesars, Andre's Downtown, Boa's Steakhouse @ Caesars Palace, Aquaknox @ Venetian, Bouchon @ the Venetian, Bradley Ogden @ Caesars Palace, and Daniel Boulud Brasserie @ the Wynn. I have eaten at most of these places and they are all excellent!

Cesar's Palace - the forum shops - at the beginning there is a fancy restaurant called the Palm - they have lobster and s-cargo.
Or the Bellagio has a restaurant in surrounded by a garden and ponds (but the food was just good, not great)
But all the nice casinos have good restaurants - depends what you like. I prefer the buffets and 99 cent shrimp cocktails.

I notice that you only say "nice" without explaining what you mean (themed? elegant? fun?) so you're getting very expensive recommendations from people. I couldn't afford most of those, myself. But there are moderately-priced places that are more casual and really fun: Quark's Bar & Restaurant, Margaritaville, Toby Keith's I Love This Bar & Grill, Peppermill Lounge, and Rainforest Cafe, for instance. Check them out.

I know you don't want a buffet, but you should definitely check out the Bellagio buffet. It is about $30 and the best in vegas. You can get all you can eat seafood (lobster, shrimp, etc.), duck, steak, chicken, desserts. It is amazing. You should check it out while you are out there.
