MASTER GARDENER TO THE RESCUE
Run, don't walk to your local nursery and pick up some bird netting. It is about 1inch square type netting made to drape over fruit trees. It will take 2 people (3 even better) to drape the netting because like all netting, it will snag on everything. cover the southside of the tree first as that will be your sweetest fruit.
the unofficial rule is that you allow a small part of every crop exposed for the local birds. but that usually comes automatically when hanging bird netting. at seasons end, cut away the netting and trash it. it's cheap and not worth the pain of trying to take it off and reuse.
Other methods of bird control won't cut it with the smart birds of the calif desert. they eat scarecrows for breakfast. you can stand next to your tree and jump up & down waving a big flag & they'll just poop on you as they munch on your fruit.

the best scarecrows: try to hang a rope between two trees or between the highest point of your house and a tree- AS HIGH AS POSSIBLE. and make a falcon-shaped somethings that would hang there and bob up and down in the halfway - large, i mean. like really big eagles or even bigger. i reckon if one end of the rope is higher than the other, the eagles should appear to be flying downwards. install several ropes with one eagle each. if you have children you can ask them to paint the eagles like real eagles, they will be proud of contributing to higher yield of fruit. of course nets are better, if you can cover the trees with nets (be prepared that the birds will try to get under the net) that is the best

Bird netting is good, also try planting something they like better away from your fruit trees in addition to the suggested ideas.
If you go with the stuffed owl trick, make sure you move them around periodically. Birds learn they are no threat pretty fast.

I have been reading all of Garden Dok's best answers and the dude rocks! Everything he says is always right on the money. I know because I have been looking up his answers. If he said the sky in Texas is yellow, I'd bet my life he was right. So what ever he answered, I agree!

do some research. scare birds (owl & crow), large eye, shinny streamers, aluminum plates, nets, water sparyers radios hooked to
motion switches. keep changing what you are doing as the little critters get use to what you are doing. keep it natural somebody is going to eat the fruit in the desert your water table can be ruined by chemcals somebody will be drinking that water

You can buy anti-bird netting to cover your trees. Also, see if you can call your county agricultural agent for advice, or ask some local farmers.
