Could build a trellis around the unit and then plant any of a number of vines.
All need to allow access to the unit and be three to five feet away from the unit at MATURITY.

a hedge or a cedar would do the job....but remember at some point in time the a/c guy will need to get in and service the unit. plant your screen at least 3' away from the sides of the unit and dont let anything obstruct the air flow

Hedges might work for this. They can be controlled through trimming. You will need to leave an access area for maintenance and cleaning of your unit.
Be careful that you don't cause bug problems into your unit.

I know someone who bought some pretty wicker selves and put them around the unit and put a lot of pretty flowers on the selves.

well I like the wicker shelves myself, but Rose rugosia, or Arborvitae. They are both quick growers and will cover the A.C. in no time. I think the roses will take the dry heat better than the Arborvitae how ever!
