To get a pitch, you will need to lay some lumber down the center. Start by securing it to the roof with screws or a heavy duty cement. Then stack more on top until you have the height you need to get a pitch. Then build rafters to make a gradual slope out the the edge of the roof, tapering the ends so they are flush where they come to the edge of the roof. That will save you from having to build trim at the edges of the roof. Then lay plywood over the lumber and nail or screw it down. Seal it to the roof at the edges with caulking. I recommend 100% silicon, it lasts a lot longer than the other stuff. Finish off with shingles and you have your pitch with a nice watertight roof. You will need to finish off the ends front and rear with either siding or shingles and I would recommend installing some vents to relieve the heat that will build up. It will actually make the home cooler in hot weather.

OR
There is a rubber skin that can be laid over the original roof. It gets cemented in place. You would need to trim around any vents or skylights and seal with cement where you had to cut it, but it should be waterproof when finished. That won't give you the pitch you desire but it would be quicker and perhaps a bit easier. We did that to my folks camping trailer. Your double wide is a much bigger project so I don't know how much it would cost. You would have to get price for material from company that specializes in mobile home roof repairs.

your cheapest solution is not to increase the pitch but seal it good.Get a 5 gallon pail of aluminum roof coating( about 15 bucks) and coat that roof like you mean it. Very important to mix it thoroughly first, it takes more work to mix it than to paint it on

have a membrane roof installed. Or my personal favorite is to sell that one and buy a new "TRAILER" that's the cheapest solution.
