France is considerably cheaper for property than Britain, but it's a big step and you should weigh up all the odds first. It's getting less cheaper as more and more Britons leave our overcrowded island, which the wonderful New Labour government now runs for the benefit of yobs, criminals, big business and drug dealers. Good luck to you, I hope it works out. There's certainly more countryside in France.

Brittany and Normandie are great areas, not too far from Paris, but beautiful countryside.
Then if you prefer warmer areas you could head south.
The french basque country is hilly and magnificent...
Provence is also fantastic, around Aix for example...
Or the back country (hills) behind Nice and Cannes.
And the area around Toulouse is also quite nice...
You have dozens of choices...
Look around a bit before deciding
(I would probably head towards the basque country, I have already visited it and I like it, besides it is close enough to Spain that you almost have two countries for the price of one!)
(By the way, I live in Spain, though I am french)
