The fact that dinosaurs disappeared completely from the fossil record about 65 million years ago, and the oldest human fossils are far less than 1 million years old. The mass extinction 65 million years ago (which took lots of other animal and plant species besides dinosaurs) is one of the most noticeable events in the geological record. (See first source.)
(Incidentally, the scientific consensus is that birds are descendants of dinosaurs, and thus we could say that dinosaurs still roam the earth in the form of birds.)
Incidentally, all claims of footprints of humans and dinosaurs coexisting have all been shown to be either a hoax, or a gross misinterpretation of the find.

There is no proof they didn't roam together. There is more proof in fact they did. The word dinosaur is relatively a new word. What they were called before, where DRAGONS. Get an older dictionary and under dragon, you'll see "rarely seen but still existing..." Also, there were human footprints and dinosaur footprints found together fossilized in limestone. One scientist, in the religion of evolution, refused to simply turn around and acknowledge the finding.

All dinosaur remains date to millions of years ago. The earliest people were no more than a couple of million years ago (although they were a different species from us). Therefore, dinosaurs were gone long before man showed up.
The stories of dragons were from people finding dinosaur fossils and trying to figure out what they were. The gryphon (another mythical creature) was based on the findings of monoceratops fossils. They appear to have an eagle's beak.

there are no cave paintings of dinosaurs..
dinosaurs were killed off 55 million years ago where as humans only arrived a few million years ago
erm..
there are no fossil records of any humans and dinosaurs together..
erm.,.
that`s about it, really.. unless i think of something else
