I guess there are two things firstly there is a saying "desire before ability" so basically we have to have the desire to do or be something before we have the ability to achieve it,hence therefore I guess its natural to always strive to achieve the unachievable.
Secondly they say that "destiny should not be waited upon, but should be pursued",so again I guess we try to pursue it even if sometimes we have already found it and that in turn leads us to the conclusion "you don't realise what you have until you loose it" !
Well who ever said life would be easy anyway !

Because we're such demanding people. We always "want" what we can't have, we never "need" what we can't have. We've grown to be greedy persons by time and we don't even feel it because it has become apart of us and it looks normal for anyone to want something. We always look for the top things never accept anything lower than tha top thing or even what we already have. Don't people know that one day, that one thing they wanted the most and couldn't have would be right in between their hands?
Plus, this happens because some things or some persons you just can't get so easily, you have to suffer and sacrifice in order to get them and be with them. There should be an effort made to pursue what you want.

its a horrible thing, isnt it? But i can tell you one thing. I waited four years for the guy i wanted. Beleive me, its worth the wait! Now we are getting a house together!
It is hard, but try and keep your mind off the person you want. My therory on love is quite strange, but true:
Love is like looking for cows.
If your driving through the country-side, and see a cow, its not that intersesting, because in a way, you knew you would see/find it.
However, if you were camel riding through the sahara in the middle of nowhere and saw a cow you would think its more special, as you were not looking for it, you just found it.
Hey, it sounded better in my head. he he.

its human nature, more so a fem. nature,
let me tell u a joke - wife is something who, repeatedly says some thing or other and changes you in 2 yrs of time, and after 2 yrs, shes screams, you are not like you were before.
if everyone gets the desired partner, there would have been no divorces, the world would have been the best place to live.

If you had five boxes of open treasure but one box under lock and key, you could enjoy the five open boxes but long for the treasure that you can't get at. It's a human thing for us to want what we can't have but if we could have it, it would probably lose a lot of it's appeal.

Because once you get it then you have everything you want and there is no goal and you get bored. Usually boredom leads to trouble.

You are right in what you say.
But the secret of happiness is to learn to enjoy what we have.
