Go to .99 cent store and get two magnifying glasses of
different sizes, mount them on a piece of wood so you can adjust the distance between them.

You take it from there.

Well the easiest thing I can think of (depending on the level that is required, this may be too easy) is investigating the optical property of water.. for example, if you stick a pencil in water, it looks different in the air then in the water.

Another thing you can talk about is crystal and how it breaks up visible light into all the colors of the light spectrum.

Also.. maybe optical properties of different shaped lenses? Concave vs. convex and what they do to images?

Pick carbon. It exist in two totally opposite optical forms - as optically opaque and black "coal" and as optically transparent "diamond". How can that be since it's a basic element and not a mixture of anything?
