You won't be able to tell. Police get sneakier every day.
The ones you have to worry about are snitches. They aren't as bound by the law as police are and that makes them much more dangerous.

I am a pilot for a large airline and trust me, you would have NO idea who the marshalls are on board the flights these days, and that is the job, to be UNDERCOVER

You can't. That's the whole point. It's not like in the movies where they wear bad suits and stare right at you until you look at them then they pretend to window shop.
