A simple way is to place the green leaves between several sheets of newsprint (an old newspaper will work) and then place the flat leaves and newsprint between the pages of a large book (the newsprint will protect the pages of the book).
Place the book flat on the floor or table out of the way and then set some heavy weight on the book and leave it closed. After several days (weeks is better), the leaves will be dry, but retain their green color. Of course, they are fragile so it's important to keep them flat in whatever use you have for them.

I pick green tea leaves from my tea garden in summertime. when winters are approaching I pick the leaves and leave them on a breadboard in the kitchen. When they dry I place them in jars.
They would dry if I put them in the jars right away also but i keep them out as long as possible so that I get more chlorophyll and oxygen released from them while they are green.
