I get abdominal problems and brain fog and usually wind up with a headache or some problem several days after eating even a small amount of wheat. I'm finding I'm also sensitive to milk, vinegar, almost all oils. Is this still celiacs disease?

If one has Celiac Disease, one must avoid not only wheat (and all derivitives such as spelt, tritical, kamut, etc.) but also barley, rye and oats.

Distilled vinegars have been shown to be gluten free as the distillation process does not carry the gluten to the final product.

Celiac Disease manifests in a broad spectrum of symptoms which can include gastrointestinal distress and neurological issues. Testing for Celiac Disease is done through the use of blood work and an endoscopy. For more information, please visit the Gluten Intolerance Group (www.gluten.net), the University of Maryland Celiac Research Center (www.celiaccenter.org), and Celiac.Com (www.celiac.com).
