For me that changes all the time, and there is electricified Chicago blues, for which I'd name Buddy Guy, Delta blues (15 years ago it would have been B.B. king) but now, even though he's from elsewhere,Kenny Wayne Shepherd. Jonny Lang is the real deal too.
Among the ladies, Susan Tedeschi and Shemika Copeland are real good.
A less well knowm, but first-class bluesman is Carl Weathersby. A white guy with chops is Corey Stevens,
And in British blues, well Clapton is god, they say.
