There are tons of good shows to see, depending on how much money you have available. There's also LOTS of good food to be had, for a fairly inexpensive price.
There are free shows, too, on a regular basis at some of the casinos, like the Pirate Show at Treasure Island.
One of the things I recommend is the buffet at Mandalay Bay, as it features lots of seafood and shellfish for an inexpensive price. While you're there you might want to check out their Shark Reef experience, it's pretty cool and fairly inexpensive. I found it quite chilling to be that close to a shark, able to literally look it in the mouth, safely.
The Lion Habitat at the MGM Grand was pretty nice, too.
Some of the architecture alone in the more inventive casinos are worth a look, they're just plain pretty to walk around in, if not outright impressive. Ceasar's Palace, and the Belagio, for example.
There's even a gondola ride at the Venician, though the line for it was always very long.
There are rides, too, like at Stratosphere, or inside the Luxor.
There's pretty much a little something for everyone. Hope you enjoy your trip!

Ride the Monorail. Ride the trolley. Walk through St.Mark's Square at the Venetian. Go to Hoover Dam, and by all means manage to be at the top of the Stratosphere tower at sunset.
