Well we had salad, spinich and corn, & my grandpa had to have his fresh graden grown tomatoes.

I made a casserole. Now what the hell was in that.

2 Cups cubed, cooked, cooled chicken
1/2 cup water,
1/2 teaspoon garlic power
One can of some kinda mexican type soup
4 flour tortills cut into strips.
1/2 cup cheddar cheese.

Mix everything together except cheddar cheese. Mix well. Top with cheddar cheese. Bake 30 minutes on 350

I have no idea what you have in your house to eat. If you have
much at all in your refrigerator you can come up with a good salad. I had frozen chicken tenders in the freezer. I floured and
browned 4 of them, opened a can of sliced mushrooms when the chicken was brown & added that (drained) to the skillet. A few leaves of green spinach. After 25 mns I added some shredded cheese and when it was melted, yum! All in about 30 mns.

Start with a nice, crisp salad with all your favorite toppings, perhaps with some bread sticks. Then side that with a heaping bowl of homemade stew (meaty & tons of veggies). Something not too heavy and yet filling. Do not to forget to brew a nice pot of tea for an ice cold refreshing drink to wash it all down.

Since its hotter than hell, I would say find a nice cut of meat and turn on the grill!!! Grilled thick cut bone-in pork chops with potato salad and some freshly sliced mango sounds easy and also makes a solid base for Saturday night revelry.... plus you can drink beers while grilling!!!
