With that in mind, what the hell is Snow White all about?

It's a kind of warped Eden meets Christ-story allegory.

The wicked queen is "Satan." She is powerful, prideful, vindictive, and wants to be the best thing, most revered and feared thing. She is evil, and Evil is ruling the kingdom. When this woman Snow White (who by here very name symbolizes purity and is perhaps the feminine Christ) comes around, "Man" is captivated and Satan gets jealous. To the point that "Satan" sends out a hench man to kill "Purity." The hunter can't do it so hides her in the wilderness where she is safely kept with a group of asexual short males. They are kind of like the disciples--a bunch of working class goof balls. She nurtures them, gives them better ways to live their lives. She fills them with love.

"Purity" thrives with her followers--but then this "Satan" knows she is alive goes out into Eden on her own--denying all of her own beauty thus being an ugly witch--and cunningly dangles that apple. Our Christ-figure suddenly turns into Eve and the apple kills our Purity. However Purity is resurrected by a Man's love--which let's just say that the prince represents humanity choosing good over evil. His love makes our Purity live.

It's warped. But you know these things were told around fires and it took years for them to be the written word. Things get messed up. Still, pretty sure that is what this about.

The mirror is Hollywood. The crime of Snow White was winning the battle of beauty that Hollywood encourages. The witch driven to be the prettiest did not live with seven dwarfs. The witch was not driven to nurture anyone. The heroine Snow White sang with the animals tending her men content. She questioned nothing when the witch gave her the apple. The apple is the propaganda of Hollywood that poisons self image. Subtle sexual innuendo is implied throughout the movie but of course all is resolved when the handsome prince kisses the Snow White. All of this after all seven dwarfs had a peck with her. It really is a tongue and cheek mockery of the superficial ideas the dominate some peoples belief system. One idea it mocks is "the white as snow" and the idea of the nurturing, chaste woman. So while exalting Snow White there is that nagging idea that maybe she did the dwarfs.

As you mentioned, fairy tales are usually cautionary/moral tales. One of the lessons is the evil of vanity. The Stepmother/Queen tries to kill the virtuous Snow White because her vanity couldn't allow a more beautiful girl to live. It is also a lesson in obedience, had Snow White (representing children and women) listened to the dwarfs (representing parents and men), she would never have been harmed by the witch in disguise.

They always represent the conflict between good and evil. Snow White in particular possibly representing the conflict between the new wife and the now stepchild, who the father adores. And lets face it, this is common, even now. Although we dont always turf them out into the woods and try and murder them! At least not in literal terms.
The dwarves representing each of our human characteristics. And how we use them to eventually achieve what is due to us, through perseverance.

It's about jealousy. The wicked stepmother is jealouos, and the way she reacts to Snow White is the story tellers way of expressing the down side to that emotion.

I think it suggests that polyandry is a viable relationship, if the guys are relatively short, yet successful entrepreneurs.
