I know I can change the font each time I compose but I want to have my choice of fonts come up automatically each time I compose.

It all depends on what you use to compose email. Most stand alone clients like Outlook, Outlook Express, Thunderbird, etc. will allow you to set the default font under the email preferences.
Yahoo! Mail does not let you do this, not sure about other web based email.
If you add info to your question about what email program you use, I will update with instructions if it is possible,
