It is the volume of each cylinders piston travel times the number of cylinders.
Cylinder Radius x Distance Of Piston Travel x pi (3.14159) = C.I.
Times the number of cylinders.
A 4inch bore with a 3.5inch stroke and 8 cylinders is 351.185808ci

the cubic inch is usually hidden under the motor, look under the motor and you should find the cubic inch, but i guess not all motors have the cubic inch

radius(half the distance across the bore) squared(times itself) x 3.14 x the stroke of the piston x the number of cylinders

the easiest method is by the # cast in the block or if it is the original engine in the vehicle the vin # call the dealership and ask them to cross reference the information. You may be able to get some help from Advance Auto or Auto Zone too.
