I think that it is quite possible for a person trained in the forensic sciences to understand many traits of a respondent by closely analyzing the answer.
The manner is which the answer is worded can reveal something about one's educational background.
The content of the answer can tell us a bit about the person's intelligence (not to be confused with education).
Spelling let's us know if the person is conscientious enough to use "Check Spelling."
Grammar may tip off a geographical location. [The construction: "I was wanting to see...." would not be typical of northeasterners, but would be common in the south.]
Even a sincere response, may give a hint as to whether one has a sense of humor.
Use of sexist or non-sex-specific language is pretty easy to discern.
And there are many more indicators, but , if I tell you what they are, I'll have to kill you.
P.S. One can also tell a great deal about people by the way that they ASK a question.
[For example, you wrote "a lot," which is correct. Many people, even those with some college education, think that the expression is one word, "alot." On the other hand, you are not very careful about parallel construction. Note that "a person" is singular and "they" is plural. The question, if asked by a well-educated person would read, "Can one (better than personalizing the clause with "you") tell a lot about a person by the way (that) he or she answers a question?"
I would expect a college graduate to write, "Is it possible to ascertain much about individuals by the way that they phrase their questions?"
But, that last example is "personal preference." There are many other correct ways of writing the inquiry.

Sometimes - a person could give an articulate/sincere/witty/funny answer one day and the next be in a foul mood and be a daftie leaving sarkky or succinct replies..
I think depending on the question - sometimes you can get a glimpse about the kind of person someone is.

I think you can tell a little bit. Especially when you get the people that are very rude, religious or sexual when answering questions. They really stand out amongst all the genuine answers, and not in a good way.

Not as much as you can tell from the person asking the question!
Just read some of those sermons dressed up as questions...
