Mexican food began in Mexico. Some of it made it to the United States, much like Italian food did. In many ways, it is totally different from Mexican food in Mexico, just like American "Italian" food is different from food in Italy.

If you are referring to the run of the meal "Taco Bell" stuff then it originate in Texas..it is called "Tex-mex" It is an Americanized version of mexican cuisine.
