Check with whoever assigned your essay. There are two ways of counting. Editorial count is counting letters and dividing by five to get the word total. Actual count is counting every single word.
Most 500 word essays are as close to 500 words as possible, without going over. But again, check to see if your prof wants precisely 500 words. That would be a VERY unusual assignment, but anything is possible!

As others have already said, there are different words for titles, bibliography, etc. that don't count. But I would look at 500 as the minimum and push for extra to make a better impression on the teacher. Try for 550 or so and don't do the minimum.

Every word in you the body of the essay but not your name or the date. Just start to write. Describe whatever you're writing about. Go into detail. Don't stress so much about the word amount, just write. Do some prewriting activities to get your thoughts together and then just write.

This depends on your instructor...when I assigned an essay, I told my students that articles (an, a , the) are not part of the total word count. Check with your instructor
